Healthy Ferrero Rocher

I have been doing an anti-inflamatory diet for the past week. I’m only on day 9. It hasn’t been too bad but I still have my usual cravings for biscuits and chocolates. I have to admit but I’m a chocolate addict. During this diet I’m allowed this healthy ferrero rocher, they are amazing for those cravings. You have one or two and you’re sorted :) See the recipe below. I use my thermomix but you can use any other strong blender. I keep the energy balls in the fridge for up to 7-10 days… well that’s the idea but it seems my husband and daughter like them too so they’ve never lasted that long in the fridge.

Chocolate Hazelnut Energy Balls

Ingredients

  • 300 g blanched hazelnuts or hazelnuts and then

  • 175 g medjool dates, (approx. 9-10), pitted, halved

  • 3 Tbsp cocoa powder

  • 1 tsp vanilla extract

  • 1 - 2 tsp water, as needed

For the Preparation all you need to do is blitz the hazelnuts then add dates, cacao powder and vanilla and blend together. Add the water if the mixture is too dry and they are not coming together. Roll the mixture into 20 balls then place on a tray in the fridge until ready to eat :)
